White vinification with controlled temperature fermentation. Secondary fermentation occurs in an autoclave following the Charmat method, with a period of lees contact that varies depending on the vintage.
This sparkling wine shows a pale straw-yellow color with greenish reflections and a fine, persistent mousse. The nose reveals delicate floral aromas, green apple, white peach, and subtle hints of aromatic herbs. On the palate, it is fresh, light, and harmonious, with pleasant acidity and a slightly mineral finish.
Excellent as an aperitif; pairs well with light starters, seafood dishes, shellfish, sushi, fresh salads, and mild cheeses.
