100% Chardonnay, sourced from Grand Cru villages in the Côte des Blancs—namely Avize, Cramant and Chouilly. Bright straw to pale gold colour, fine steady mousse.
Citrus peel (lemon, grapefruit) and green apple. White flowers and chalky/mineral notes, reflecting the terroir. From some sources: pastry‑and‑brioche elements, butter, toasted almond.
Fresh and vertical: crisp acidity, definite minerality.
Apewineboxes
Richer texture than one might expect for a blanc de blancs: medium‑to‑full body, with a fleshy core of fruit, yet clearly Champagne‑bracing in structure.
Fine, persistent bubbles; long finish with subtle chalky/stone‑like impression.
Excellent as an aperitif but also pairs beautifully with refined seafood (shellfish, oysters), sushi, baked or grilled white fish. Thanks to the minerality and structure, it can hold up to richer dishes without losing freshness.
It’s already drinking well, but offers ageing potential, especially given its quality and terroir pedigree.
