Palate: dry, full-bodied, high acidity, firm but refined tannins, high alcohol; flavours of ripe cherry, plum, liquorice, leather, and vanilla. Complex and well-balanced, with a long, elegant finish.
Food Pairing: ideal with grilled or roasted red meats, game, wild boar stew, and aged Pecorino.
