It undergoes a long ageing in large Slavonian oak casks, not in barriques. Bertani uses 60-hectoliter casks, and the ageing in wood lasts about 6 years, followed by additional bottle ageing before release. This approach gives the wine its classic and austere character: less influenced by small oak, and more expressive of dried fruits, spices, and freshness. Deep garnet colour with aromas of cherries in spirit, dried plums, sweet spices, liquorice, and hints of balsamic and tobacco. On the palate, it is rich, velvety, and well-structured, with a perfect balance of acidity and tannins, resulting in an exceptionally long and layered finish. Food Pairings: Excellent with braised meats, game dishes, and aged cheeses such as Monte Veronese or Parmigiano Reggiano (36 months) or mature Monte Veronese.
